These pancakes are made with your favourite natural ingredients: honey, bananas and spinach, which means they are packed with antioxidants, full of flavour, and healthy for you, too!
This recipe uses pure honey instead of sugar, as well as banana, to sweeten the pancakes naturally. You would never even know that these pancakes are packed with nutrient-rich spinach if not for the fun green colour! We recommend topping your pancakes with pure honey and organic fruit to enjoy all the health benefits of pure honey.
2 large eggs
1 banana, ripe
⅓ cup Greek yogurt
2 tbsp pure honey
1 tsp vanilla extract
3 cups spinach
¼ cup milk
1 ½ cup all-purpose flour
1 ½ tsp baking powder
½ tsp salt
- In a high speed blender, blend eggs, banana, yogurt, pure honey, vanilla extract, spinach and milk until smooth.
- Combine dry ingredients in a large mixing bowl. Mix dry ingredients with the blended mixture until there are no lumps and a pancake batter consistency is achieved. Add more milk or flour, one tablespoon at a time, if the mixture is too wet or dry.
- Ladle batter in ¼ cup portions onto a hot, greased pan or griddle and cook until just golden on both sides.
- Serve warm and top with pure honey and fruit.
