What is pure honey?
Pure honey is natural honey, straight from the hive. It is unfiltered and unpasteurized, ensuring that all of the beneficial nutrients and compounds remain in the honey. Because pure honey contains very small amounts of pollen, it can be traced back to its original source.
When honey is highly processed, it is filtered and exposed to high temperatures for a prolonged period of time. This process destroys any nutritional benefits of the honey. Processed honey is also easily adulterated, as it is nearly impossible to detect if the honey has been mixed with lower quality honey or artificial sweeteners after compounds like pollen have been removed or destroyed.
Why does honey crystallize?
Crystallization is a naturally occurring process that happens when the sugar and water content in your honey begins to separate. Crystallized honey is perfectly safe to eat. In fact, it is an indication of high quality honey, as crystallization happens faster in pure, unpasteurized honey where there are pollen particles for the sugar to build on.
Does honey expire?
Pure honey is a natural preservative, and when stored properly, it will not expire. Ensure that your honey jar is tightly sealed and stored in a pantry or cupboard for the longest shelf life!
Should I store my honey in the refrigerator?
Honey does not need to be refrigerated. Storing your honey at cold temperatures will speed up the process of crystallization.
Is there a difference between raw honey and pure honey?
The terms ‘raw’ and ‘pure’ honey are often used interchangeably to describe honey that is unpasteurized and unfiltered, retaining beneficial enzymes and nutrients.
