More Than a Spoonful — A Guide to Dr. Bee's Culinary Honey

There's a lot more you can do with a jar of Dr. Bee honey than eat it straight from the spoon — though there's nothing wrong with that either. Whether you're working with our Ice Honey or one of the infusions, here's how to get the most out of what's in your kitchen, and how to keep it at its best.

Ice Honey

Velvety, glacier-white, and layered with a wild floral sweetness. It gets that texture through a slow, cold-processing method — nothing added to force it. Because it's so smooth, it works well anywhere you'd want honey to melt in evenly rather than sit on top.

How to use it:

  • Straight off the spoon
  • Stirred into warm tea or coffee
  • Spread on toast or pastries
  • Drizzled over yogurt or a cheese board

Pairing idea: Warm it slightly and serve alongside a soft cheese board with something crunchy — a water cracker or toasted baguette. The floral sweetness holds its own against a sharp cheddar or a mild brie.

Storage: Keep the lid on tight and store at room temperature, out of direct sun. No fridge needed.

Ginger Infusion

Bright, zesty warmth balanced by honey's natural floral depth — just two ingredients, nothing else added.

How to use it:

  • Stirred into warm water or tea for a bright reset
  • Swirled through yogurt and oatmeal
  • Drizzled over fruit or pancakes
  • Whisked into dressings or baking

Pairing idea: Stir into hot lemon water first thing in the morning — a warm, bright start before coffee even enters the picture.

Cinnamon Infusion

Pairing idea: This one's best appreciated slowly — a proper ginseng honey tea, the kind of ten minutes you take just for yourself, rather than folded into something else.
