How Ice Honey Is Made: From Nectar to a Jar of Gold

Location Matters

The journey to exceptional honey begins with pristine environments. Ice Honey is sourced from remote areas in northern Alberta, untouched by human activity, ensuring purity free from pollution and pesticides.

From Nectar to Honey

Our bees roam the glacier-fed wildflower blossoms of the Rocky Mountains. They collect nectar, returning to their hives to transform it into honey. Natural enzymes break down the nectar, and bees fan their wings to reduce water content. Honeycomb cells are capped with beeswax, preserving freshness.

Patience Rewarded

Ice Honey undergoes a meticulous process. After natural crystallization begins, we gently heat the honey to achieve its creamy texture. Many honey producers liquefy their honey at higher temperatures and use additives to cream it. Even unpasteurized honey can lose its beneficial properties if heated this way. Our method protects the enzymes and enhances the natural white colour, yielding a velvety honey with no additives.
